Pop-Tarts Pumpkin Pie

This is a compensated review by BlogHer and Pop-Tarts.



The kids and I got to play with our food to create a Pop-Tarts recipe. The kids' idea was to take a Choc-0-Lantern Pop-Tarts, cover it with orange frosting, and then top it with another Pop-Tarts which has been cut into a Jack-o-lantern shape. Simple, fun, cute, and festive, no? But did I listen to them? Nope. I had a better idea. And by better, I mean much more complicated. (Sometimes, I get this idea I'm a Food Network star. I'm not.)



My idea was to use these limited edition Pop-Tarts to create a chocolate fudge crusted Pop-Tarts Pumpkin Pie. We crumbled 6 Pop-Tarts into a bowl.


Then we added half a stick of melted butter to the crumbled Pop-Tarts. We mixed it well.


Then we pressed the chocolate fudge Pop-Tarts crust into a 9 inch pie plate.


The kids helped me to mix the pumpkin pie filling.


We poured the pie filling into the Pop-Tarts crust and popped the whole thing into the oven. Smell that? Mmmmmmm!


The finished product! Chocolatey Pop-Tarts pumkin pie!

My favorite fall recipe is honestly somanythings.

Apple crisp? Easy peasy. In dire straits it is acceptable to just pop an apple in the oven with some brown sugar (and maybe a dab of butter)

I also love to make hot fudge pudding cake. The kind with both white and brown sugar and melted butter instead of oil is the best.

I like this Acorn Dough Nuts Recipe, courtesy of Disney Family Fun:

Frost a third or so of a plain or glazed doughnut hole with chocolate frosting or peanut butter.
Roll the frosted top in crumbled toffee, then add a small piece of a pretzel for the stem.

Pumpkin Rolls are one of our family favorites. A cream cheese filling in the center of a pumpkin cake like mixture. DELICIOUS!! Also, caramel popcorn is another good one.

My favorite fall recipe would either have to be glazed sweet potatoes or Topsy Turvey Apple pie. ANd I don;t usually like apple pie, but this is the best recipe.

I have an apple cake recipe that is so yummy. It is even better with fresh apples from our local orchard! I serve it warm drizzled with caramel syrup and a scoop of vanilla ice cream. SOOOOO GOOOOD!!

I like to keep it simple, since I am not a BIG halloween fan. I will make sugar cookies with orange frosting, then add some black gel to make them look like jack-o-lanterns.

My favorite fall recipe is pumpkin bread. I always slather a ton of (real)butter on top. Yumm! Unfortunately, I am not a great baker and my Mom makes this for me, so I couldn't tell you how to make it!

My family enjoys making Rice Krispies treats and using food coloring to dye the marshmallow cream black and then dusting orange sprinkles on top. Always a hit with the kids!

My favorite fall recipe or dish is anything that's got halloween decorations on it. I'm a sucker for looks. We make this thing called "Mummy mix" with pretzels, white chocolate, all kinds of things! I also love apple pie!

I like a good old fashioned pumpkin pie. A few cups of pumpkin, eggs, tons o' brown sugar, pumpkin pie spice (dunno exactly what the spice mix is), some cinnamon, nonfat evaporated milk and yeah you'll need a pie crust. Toss it in the oven and when your sister says its ready grab the vanilla ice cream and pie and run as fast as you can!

Haystacks... they are NUMMY!
ingredients:
1 2/3 cup butterscotch morsels
3/4 cup creamy peanut butter
1 can (8.5 oz. size) chow mein noodles
3 1/2 cups miniature marshmallows

Directions:

Line trays with wax paper.

Microwave morsels in large, uncovered, microwave-safe bowl on medium-high (70%) power for 1 minute; stir. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted.

Stir in peanut butter until well blended. Add noodles and marshmallows; toss until all ingredients are coated.

Drop by rounded tablespoon onto prepared trays. Refrigerate until ready to serve.

DOUBLE BOILER METHOD: Place morsels in top of double boiler over hot (not boiling) water. Do not cover. When most of the morsels are shiny, stir just until melted. (Prevent water from coming in contact with morsels.) Remove from heat; stir in peanut butter. Transfer to large bowl. Add noodles and marshmallows; proceed as above.

Pumpkin rolls with cream cheese fillings, they are absolutely delicious and we make some with nuts mixed in, we make quite a few rolls and then freeze some for later

Pumpkin dip
Ingredients
• 1 (15 ounce) can pumpkin puree
• 1 (8 ounce) package cream cheese, softened
• 2 or 3 cups confectioners' sugar
• 2 teaspoon cinnamon
• 1 teaspoon minced fresh ginger
Directions: Place all ingredients in a bowl. Beat with electric mixer until fluffy. Serve with gingersnaps.

I always think "soup" when I think of fall food. And apple dump cake...SO EASY! Just dump a can of apple pie filling in the bottom of a casserole dish, then dump a golden cake mix on top. Cover with butter pats and bake at 350* for about 30-40 minutes depending on how "done" you want it (we like it a little on the mushy side so I do 30).

My favorite is pumpkin pie, but I also love cornbread dressing. My grandmother taught me how to make it and it always reminds me of her.

I had to come over and check out this post because I LOVE the pumpkin pie pop tarts. They are so yummy. I'm glad they are only around for a little while.

Pumpkin Chiffon Pie

Ingredients:
Serves 8

* 1 envelope unflavored gelatin
* 3/4 cup sugar
* 1/2 tsp. salt
* 1/2 tsp. ground cinnamon
* 1/2 tsp. ground allspice
* 1/4 tsp. ground ginger
* 1/2 tsp. ground nutmeg
* 3/4 cup milk
* 2 large eggs , separated, yolks beaten
* 1 cup canned pumpkin
* 4 1/2 cups heavy cream , whipped
* 1 (9-inch) graham cracker crust
* Shaved dark chocolate

Combine gelatin, 1/2 cup of sugar, salt, cinnamon, allspice, ginger and nutmeg in a saucepan. Stir in milk, egg yolks and pumpkin. Cook over medium heat until thick. Chill saucepan in refrigerator until partially set—about 1 hour.

In a bowl, beat egg whites until soft peaks form. Gradually add 1/4 cup of sugar and continue beating until stiff peaks form. Fold in 1/2 cup of whipped cream. Fold egg white mixture into filling. Pour filling into pie crust and chill for 1 hour.

Just before serving, top with remaining whipped cream and sprinkle some shaved dark chocolate on top.

PUMPKIN CRUNCH CAKE




1 (16 oz.) can pumpkin
1 1/2 c. sugar
4 tsp. pumpkin spice
1/2 tsp. salt
3 eggs
1 (12 oz.) can evaporated milk
1 Duncan Hines yellow cake mix
Chopped pecans
1 c. butter, melted
Mix first 6 ingredients and pour into prepared 9 x 2 x 13 inch dish. Empty 1 Duncan Hines yellow cake mix evenly on top of pumpkin mixture. Sprinkle with chopped pecans. Drizzle 1 cup butter on top (2 sticks). Bake at 350 degrees for 50-55 minutes until golden. Serve warm with vanilla ice cream as a dessert or as a coffee cake, etc.

Chicken Tortilla Casserole

• can (10 3/4 oz) 98% fat free 45% less sodium condensed cream of chicken soup
• can (4.5 oz) chopped green chiles
• ½ container of Velveeta cheese
• 3/4 cup fat-free (skim) milk
• ½ cup salsa
• 1 1/2 teaspoons chili powder
• 1/2 teaspoon ground cumin
• 3 cups shredded cooked chicken breast
• 8 yellow corn tortillas (6 or 7 inch), torn into bite-size pieces
• 2 bell peppers, chopped
• large tomato, chopped
• large onion, chopped
• 2 cups corn
• 1 1/2 cups shredded sharp Cheddar cheese or Mexican cheese blend

1. Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, mix soup, chiles, velveeta, milk, salsa, chili powder and cumin until blended. Stir in chicken, tortillas and bell pepper. Stir in tomato and 1 cup of the cheese. Spoon and spread mixture in baking dish.

2. Cover with foil. Bake 40 minutes. Uncover and sprinkle with cheese, let sit and eat!

I'm not the most creative - I can follow a recipe, but I'm not one to envision an idea and know how to make that with food, but what I have done is take a ghost cookie cutter and cut ghosts out of rice krispie treats. Simple, but the kids love them!

We love anything Apple in the Fall. Apple pie is probably our thumbs up favorite and I go to my tried and true family Apple Pie Recipe passed down and down and down....through the generations :) but my kids always ask for Apple Syrup this time of year made with honey crisp Apples for my own special Cornmeal Pancakes.

We like to make taffy apples. We take michigan apples and dip them in caramel sauce, then when they are cooled a bit we roll the apples in chcocolate chips, or sprinkles, or candy corn.
